      • Observation (CORRECTED DURING INSPECTION): A box of salted cod and a bucket of pigs tail was observed at 10C at the time of inspection. It was unknown how long the food was in the danger zone and no temperature logs were on site.
      • Corrective Action(s): Operator vountarily discarded the food in the garbage container at the back. Ensure all foods stay at 4C or below. Ensure to maintain temperature logs to determine all equipment is in good working order and foods are stored safely.

    • 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
      • Observation (CORRECTED DURING INSPECTION): **Repeated violation** Window in the washroom was opened during the inspection and no window screen was installed at the window. Same issue was noted during the last routine inspection.
      • Corrective Action(s): Staff closed the window as soon as this was pointed out.
      • Operator must either install a window screen to prevent the entrance of pests or ensure that the staff keeps this window close at all time.

      • 311 - Premises not maintained as per approved plans [s. 6(1)(b)]
      • Observation: As per staff, the drain plugs that the operator purchased during the last routine inspection did not work out for the 3-compartment sink for this facility, therefore they do not have a drain plug that fits. However, there was a sanitize container set-up, with 200 PPM chlorine residual, in the last sink compartment.
      • Corrective Action(s): The sanitize container is inadequate as it does not fit the largest food contact item at the facility (e.g. cutting board). The facility has been approved based on having the proper 3-compartment sink and drain plugs installed and available for performing manual warewashing, however this is not being practiced as approved. Operator MUST obtain proper fitting drain plugs for the 3-compartment sink so all food contact items can be properly washed and submerged in a food grade sanitizer after the washing and rinsing steps.
      • This must be addressed by the operator by next week or escalated enforcement actions may ensue.

      • Observation (CORRECTED DURING INSPECTION): No drain plugs were available for the sink basins for manual warewashing. This is evidence that dishes are not being washed properly.
      • Corrective Action(s): Operator purchased drain plugs during the inspection. It is expected that utensils/ dishes are washed and rinsed in the first basin and finally sanitized in the second basin (fill the 3rd sink with a bleach and water solution - every 2 tsp bleach per 1 L water). Utensils and dishes must be submerged in the sanitize basin for at least 30 seconds before allowing them to air dry before storing away.
