- Observation: Discussed sanitizing procedures with staff. Dishwashing procedures are not correct as described by manager. Intended to be temporary measure until dishwasher set up. Dishwasher not set up. Sanitizer measured 0 ppm when dispensed from auto dispenser into sink. Staff only using soap and water to wash dishes. No three sink method used.
- Discussed with main manager on phone. He had contacted Canadian Linen and service tech was in yesterday to correct problem.
- Corrective Action(s): Temporary measure to be implemented by staff until a permanent method of dishwashing is in place and staff properly trained.
- A) Start of each day - fill all three sinks following three sink method as outlined in signage provided.
- B) Measure appropriate volume of sanitizer into third sink and verify by using test strips that the residual (quats) is minimum 200 ppm.
- C) Wash dishes following proper proceduress and air dry on drain rack or similar until dishes are dry.

- Observation: Auto dispenser for sanitizer measured at 0 ppm. Only hot water feed. Filled sink and water temperature exceeded 52 C. Auto feed system is not working properly and staff not sure how to apply sanitizer to system.
- Corrective Action(s): Auto feed system must be serviced immediately or removed from store.
- Implement manual addition of sanitizer as discussed until issue resolved. Sanitizer in sink must obtain 200 ppm and be immersed for 30 seconds minimum.
- This is a violation noted from previous inspection.

- Observation (CORRECTED DURING INSPECTION): Quats spray bottle measured 0 ppm. Auto feed dispenser also empty. Operator changed concentrate bottle and system rechecked. After one minute the solution was checked again and it measured 0 ppm. Auto dispenser for sanitizer does nto appear to work. Also the auto dispenser is poorly located and should be at main sinks or at mop sink location.
- Corrective Action(s): Fix/service dispenser system as discussed. Add manually the quats solution in main sink filled with water to halfway point and mix with 6 oz quats solution. Do this at the beginning of each day until fixed. Make sure all spray bottles are properly labelled as discussed.

- Observation (CORRECTED DURING INSPECTION): Handwash station in the front was lacking paper towels. Also, sink is being used for coffee purposes and various coffee tools rinsed and cleaned in this sink. THe handsink should be kept and used only for handwashing.
- Corrective Action(s): Make sure to stock station at all times. A separate dump sink for coffee purposes is recommended.

- Observation (CORRECTED DURING INSPECTION): Meassured sanitizer in unlabelled spray bottle at 0 ppm. Another unlabelled bottle with undefined product in spray bottle. Both dumped. Tested from auto feed at sink - measured 200 ppm quats (hot water source only). Staff stated bottle was filled a few days ago. Possible lag in concentrate reaching mixing valve as transprot tube was empty at beginning.
- Corrective Action(s): Recommend filling sanitizer spray bottles from fresh full sanitizer sink for dishes at beginning of day. This should be the process for manual dsihwashing anyway. To achieve proper manual dishwashing fill first sink with water and dish detergent, rinse off in middle sink (either filled with water or with sprayer) and finish dishwashing by immersing clean dishes in third sink full of sanitizer solution. Leave until visibly dirty water or quats no longer at 200 ppm.
- **Must have test strips. Use test strips to verify sanitzer at proper concentration as discussed.
