      • Observation: - Observed the weather stripping of the back recieving door was worn with some gaps visable and the insect screen door was also damaged and could allow possible pest entry
      • Corrective Action(s): - Ensure that the weather stripping is added or repair and that the insect screen is repaired so it can prevent possible pest entry.

      • Observation: - Deep cleaning of the cooking line area is required, operator has schedule in place but at the time of inspection there was food debris caked in. For this area pulling and deep cleaning underneath and on the side of the equipment is required.

      • - Observed the back area hand washing station was not in working order, temporarily the other sink located there for prep is being used as the hand washing station. The faucet for the hand washing station was observed as broken

      • Observation (CORRECTED DURING INSPECTION): Internal temperatures of multiple cold potentially hazardous foods (PHFs) stored in the prep insert cooler unit (beside the upright freezer unit) registered > 4 deg C for an undetermined amount of time. The following cold PHFs had internal temperatures registering between 9 - 30 deg C:
      • - Smoked salmon
      • - Raw eggs
      • - Egg mix
      • - Opened cheeses
      • - Cheese stored in sealed packaging
      • - Relish
      • - Turkey
      • - Coleslaw
      • - Avocado mix
      • - Mayonnaise

      • Corrective Action(s): - Staff discarded all cold PHF that were stored in the prep insert unit for an undetermined amount of time.

      • Observation (CORRECTED DURING INSPECTION): - Scoops with handles and scoops with improper handles stored directly in bulk dry food storage. Handles of scoops were stored in direct contact with the dry bulk storage.
      • Corrective Action(s): - Staff removed the scoops from the bulk storage and placed them in the dishwashing area to be thoroughly washed and sanitized
      • - Ensure that all scoops have proper handles and that the handles do not contact the dry food products directly

      • Ensure all foods are thawed in a cooler at 4C or under cold running water. Foods are not to be left on the counter for thawing. Be sure to plan ahead when food items are needed so as to move items into walk-in a day or two before product is needed.
