- 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
- Observation: Food debris was observed in some parts of the meat slicer; proper cleaning and sanitization were not maintained. Staff mentioned that the meat slicer is only used a few times during the week.
- Corrective Action: Ensure that all equipment, utensils, and food contact surfaces are maintained in a sanitary condition. Recommend to disassemble and throughly clean and sanitze all parts after every use. EHO also discussed proper cleaning process with Operator onsite.
- 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
- Observation: Accumulation of dirt and food debris were observed in the following areas: - Under the 2-compartment sink - Under the prep-table beside the stove - At the back of the ice machine - At the back of the stove
- Corrective Action: Conduct a deep cleaning of the kitchen and ensure all the observed areas are cleaned and sanitized thoroughly.

- Observation: The operator indicated the ice machine is no longer operational, and will not be used in the future.
- Corrective Action: Remove the non-operational ice machine from the kitchen if it is no longer needed to allow efficient cleaning and reduce harbourage areas for pests.

- 209 - Food not protected from contamination [s. 12(a)]
- Observation: Bins containing sugar and flour were observed to be stored on the kitchen floor. (Public Health Significance) - Bins containing food items (sugar & flour) if stored on the floor can be easily accessed by pests that carry disease causing organims, these pests can contaminate the food which if consumed can cause food-borne illness.
- Corrective Action: Ensure that the bins containing sugar and flour are stored at least 15 cms off the floor and 5 cms of the wall.
- 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
- Observation: Kitchen stove exhaust had significant build-up of grease and dust bunnies. (Public Health Significance) - Accumulation of grease and dust bunnies on the stove exhaust can physically contaminate the food being prepared. Such food itrems if consumed can cause illness.
- Corrective Action: Ensure that the kitchen stove exhaust is thoroughly cleaned and maintained in a sanitary manner.

- 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
- Observation: One sanitizer bucket was measured at 0 ppm quats, 0 ppm chlorine. Operator stated that quat dispenser sanitizer is used for cleaning of surfaces. Wipiing cloths should be stored in an appropriate level of disinfectant to prevent growth of bacteria and to limit cross-contamination between food contact surfaces.
- Corrective Action: Ensure that wiping cloths are immersed in sanitizer solution from dispenser and replaced as often as needed to maintain 200 ppm quat strength.
- 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
- Observation: Ice scoop and other food contact items observed to be stored on dish towel on shelf above ice machine. This is not an acceptable surface for storage of food contact items as it is not an easily cleanable, smooth surface and may harbor bacterial growth over a long period of time.
- Corrective Action: Remove towel and store the indicated items on a cleanable surface. Staff member suggested a wire rack for storage, this would be an acceptable storage surface.
