- Observation: Evidence of mice droppings was noted in the facility. (Public Health Significance) Rodents and other pests may cross contaminate foods and surfaces or contaminate human food with feces and urine, carry parasites and other diseases.
- Corrective Action: Remove any pest attractants such as food and water, eliminate access to the building and routes they use inside. Trap and remove the pests. Increase the frequency of professional pest control inspections. Clean and sanitize area where droppings are located and monitor situation.

- Observation: Gap was observed under the back door of the building that opens into the hot water room which is further attached to the food premises. Multiple openings were observed in the floors, walls and ceilings that act as entry points for the pests. Public Health Significance - Gaps in the doors can act as entry points for the pests which can further lead to spread of foodborne diseases.
- Corrective Action: Operator to have the back door repaired to have all the gaps sealed. Cover all the holes/openings in the flooring as well as the ceiling to prevent the entry of pests into the food premises.

- 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
- Observation: (CORRECTED DURING INSPECTION) Chemical dish washer not dispensing any sanitizer solution at time of inspection. Sanitizer bucket was empty, and machine was not drawing any bleach solution. Utensils must be adequately sanitized to prevent any potential cross-contamiation between customers as well as staff that may result in transmission of illness.
- Corrective Action: Sanitizer solution was replaced at time of inspection. Dishwasher solution was confirmed to dispense 50 ppm chlorine. Ensure that sanitizer is kept filled at all times during operation and that accurate dish washer testing is done regularly.

- Observation: (CORRECTED DURING INSPECTION) Wiping cloths for sanitizing surfaces being stored directly on counter tops and equipment. This may provide an environment for bacteria to grow and potentially result in cross-contamination of food handling surfaces.
- Corrective Action: Ensure that cloths are stored in 100-200 ppm chlorine solution as indicated on your sanitizer log sheet.

- Observation: Minor pest activity (mouse droppings) observed under front shelving at service area.
- Corrective Action: Clean the area and remove the droppings. Inform pest control service of the indicated area where activity is occurring.
