      • -no gnawed opened food packages observed
      • Hard-to-reach areas such as at the cooking line behind the ovens/grills there are grease deposits (also serve as a pest food source)
      • Corrective Action(s): Clean and sanitize any areas with rodent droppings
      • For the dry storage shelves with mouse droppings clean and sanitize the exteriors of the hard plastic foods and canned goods as well
      • Clean and disinfect hard-to-reach areas at least on a weekly basis or as needed when spills occur

      • Observation: There is a floor drain behind the cooking line with multiple drains there -the drain is not grated and the gaps are a possible rodent entry

      • Observation (CORRECTED DURING INSPECTION): - Rodent droppings present in container of flour which was not tightly sealed
      • Corrective Action(s): - Discard flour immediately. Wash and sanitize container. Completed at time of the inspection.
      • - Ensure lids on containers are tightly sealed to exclude pests.

    • 304 - Premises not free of pests [s. 26(a)]
      • Observation: - Mouse droppings present in dry storage room on lower shelves and on the top of dry goods containers. The issue appears to be primarily limited to this area with a minor amount of droppings present on floor under 2 compartment sink outside of dry storage room.
      • Corrective Action(s): - Remove all items from shelves. Clean all shelves and containers to remove mouse droppings and wash and sanitize surfaces and containers.
      • - Discard any food products which have any signs of damage/contamination or those that were not tightly sealed.
      • The above was being completed at the time of the inspection.
      • Note: Majority of food items were stored in pest proof containers; however, as noted in violation code 201, container of flour was not tightly sealed and was contaminated.
      • - Ensure any dry goods that are not currently in pest proof containers are placed in them and all containers are tightly sealed
      • - Contact Pest Control Technician for additional service to identify and address any entrance points and provide additional control measures to address issue. Provide service report to EHO.
      • Note: Pest control contract is currently in place with service every 2 weeks. Most recent service 13-Jan-2023. Report indicated rodent activity in only one trap.
      • - Continue to monitor for any additional rodent activity and ensure any additional droppings are cleaned up promptly and the surface cleaned and sanitized.

      • Observation:
      • 1) High temperature dishwasher reached 65C at the final rinse cycle.
      • 2) Sanitizer measured 100ppm quats
      • Corrective Action(s):
      • 1) Repair dishwasher so that it is able to reach 71C consistently. Repair tech called at the time of inspection. Until it is repaired, you must wash all the dishes in the dishwasher and MANUALLY sanitize (submerge all dishes in a 100ppm chlorine solution for 2 minutes before air drying).
      • 2) (CORRECTED DURING INSPECTION): Chef replaced quat solution and dispenser was able to dispense quat sanitizer at 200ppm.
