      • Observation: Bandsaw in front of the walk-in cooler has meat debris in the crevices. The saw had not been in use just before or during the inspection..
      • Corrective Action(s): Ensure all equipment are properly cleaned and sanitized between uses or at least every 4 hours.

      • Observation (CORRECTED DURING INSPECTION): Staff are mixing detergent with bleach to wash equipment (tupperware bins, knives). A proper sanitizing step is not being done.
      • Corrective Action(s): Discussed with staff, proper manual warewashing involves:
      • 1) Wash with detergent
      • 2) Rinse with clean water
      • 3) Sanitize with bleach water for at least 2 MINUTES, making sure everything is fully submerged in the solution.
      • 4) Air dry - do not rinse or towel wipe after sanitizing
      • Proper signage for 2 compartment warewashing will be provided.

      • Observation (CORRECTED DURING INSPECTION): One bag of onions in the back area was stored directly on the ground.

      • Observation: Air gap noted along the bottom of the back exit.

      • Observation: Display cooler is above 4C. Air temperature at time of inspection measured 5.7C.
      • Corrective Action(s): This has been a repeat issue. Staff inform that this cooler is regularly services due to a leak in coolant. Technician is to come on site today for service.
      • Discussed with staff, all items stored in this cooler today must be stored in the walk-in cooler overnight. Do not store any potentially hazardous foods in this cooler until it has been serviced and a follow-up inspection by FHA has taken place.

      • Observation (CORRECTED DURING INSPECTION): - Raw chorizo sausage stored in front refrigerated store display was above 4C. Internal temperature of chorizo: 9.4C, 10.5C
      • - Temperature inside refrigerated display: 11-13C
      • - Chorizo had been in unit for greater than 2 hours after being transferred from walk-in cooler.
      • Corrective Action(s): - Discard any potentially hazardous foods which were above 4C for 2 hours (or more) or if time is unknown.
      • - Chorizo sausage which was in front display was discarded by staff at time of the inspection.

      • - The above products were on the counter in the front service area.

      • - Do not sell or offer for sale any food products which are not from an approved source.
      • - Keep receipts/invoices for food products and provide to EHO upon request.

      • - Note: Walk-in cooler has designated shelving for raw meats away from the produce and ready to eat items; however, the above items appeared to have been put away not in the desginated area.
      • Corrective Action(s): - Follow food safe practices for food storage so that food is protected from contamination.
      • - Store raw meat and raw eggs beneath or away from ready to eat products and produce.

      • - Have Pest Control Technician provide additional service to address fly issues - note: Operator has additional service scheduled.
