      • The spray bottle was labelled as SANITIZER at the time of inspection.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Test strips for the quaternary ammonium sanitizer in the spray bottle are needed (200 Parts Per Million).if Bleach is used, 100 Parts Per Million Chlorine is to be maintained at the 3rd manual dishwash sink. A fill line could be indicated and the volume to that fill line determined. Then follow the mixing strength indicated on the manual dishwash signage (1 TBSP per Gallon of Water).Chlorine test strips are needed, as well.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • The pest control inspection report (monthly frequency) is not completed.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Surfaces are to be readily cleanable. Countertop edges and shelfing are not in good repair. Gaps are evident between the counter and the 3 compartment sink.the manual dishwash area is being modified, with new equipment installed. Please ensure gaps are eliminated so cleaning can be achieved effectively and efficiently.
