- Observation (CORRECTED DURING INSPECTION): 70% alcohol currently being used as sanitizer for food contact surfaces. Bleach available on site.
- Corrective Action(s): Ensure all food contact surfaces are being cleaned and sanitized with a mixture of bleach solution (1tsp of bleach to 1L of water). Operator replaced spray bottle with bleach solution tested at >100ppm.

- Observation (CORRECTED DURING INSPECTION): Paper towels and liquid soap difficult to find at kitchen handwash station.
- Corrective Action(s): Make sure to have liquid soap dispenser at this station at all times. May be best to keep lotions and sanitizers away from the station to avoid confusion. Also, mount the paper towels as discussed in manner that rolls remain accessible to the handwash station.

- Observation: Lots of flies observed in the kitchen. Also noted several sticky tape rolls on ceiling in kitchen which were full of flies.
- Corrective Action(s): Do not use fly tape in kitchen area. discard and discontinue.
- Front door should be kept closed and should have spring action to ensure customers don't leave open.
- Pass through window is a problem. Install a moveable screen and/or mount a fan above window to create air curtain to keep flies out. Back door must be kept closed.
- Follow up in one month or send pics of completed work.

- Observation: Fly tape noted in three places in kitchen area (above handsink, dish sink and sandwich press unit). Many house and fruit flies noted.
- Hand towels and/or dish cloths hanging in several locations in kitchen. Reuse a potential hand contaminant.
- Corrective Action(s): Remove fly traps and look to alternate meaning of control in food prep areas.
- Store cloths in sanitizer water (1/2 tsp bleach to 1 litre water for 100 ppm solution) and change every 2 hours or less. Only air dry dishes.

- Observation: Handwash station observed with broken/missing cold water faucet. Part on order.
- Ice machine not cycling through self clean properly as discussed. Observed moderate build-up of biomat on and around ice tray. Risk for contamination of ice. Ongoing issue.
- Corrective Action(s): Fix handwash unit as discussed. Take and send picture when completed.
- Service unit by technician as discussed AND perform manual cleaning and disinfection of unit. Remove all observable biomat from ice making and reserviour area as discussed. Take picture and send.
