      • Observation(s): Pre-made hamburger patties are stored uncovered on trays in the fridge.
      • F1.7A The operator must ensure that all food on the premises is protected from contamination.
    • F2.2 Are proper pest control measures in place on the premises?
      • Observation(s): Previously noted on past inspections and verified again today, the back door is open, no screen door. Again, the operator claims the door is left open only during deliveries. A screen door is still recommended. Additionally, no fly control measures are observed in the facility (fly strips, zappers, etc.)
    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): There appears to be significant clutter in the facility. Any material or equipment that does not get used must be removed or stored elsewhere.
      • F2.5E Equipment or materials not required for food related operations must be removed from the premises.
    • F2.6 Are the premises designed and equipped to ensure safe food handling?
      • Observation(s): Staff are using the deep freezers as food preparation surfaces, cutting veggies at the time of inspection.
      • F2.6B All food contact surfaces must be constructed from materials that are suited for their intended purpose, durable and free from any noxious (harmful) or toxic substance.

      • Observation(s): Ice scoop handle was in ice within ice bin. Ice is a ready-to-eat food.
      • F1.7C Ready-to-eat foods must be handled/displayed in a manner that prevents cross contamination.
    • F2.2 Are proper pest control measures in place on the premises?
      • Observation(s): Back door was open with no screen door.
      • F2.2B The premises must be protected against entry of pests.
    • F2.7 Are there handwashing stations available and properly supplied?
      • F2.7B Handwashing station must be supplied with liquid soap in a dispenser.

      • Observation(s): Salad dressings made from raw garlic and oil were found at room temperature for >2 hours, which could allow pathogens to grow/sporulate and the formation of toxins (i.e. botulism toxin).
    • F3.4 - Are the premises, equipment and utensils designed and maintained to ensure safe and sanitary food handling?
      • Observation(s): Upright cooler near the dish pit was not operational.

    • 8 - Are equipment, food contact surfaces and utensils washed, sanitized and stored in a manner that removes/prevents contamination?
      • Observation(s): Wiping cloths were found in buckets of water without sanitizer. Although a sanitizer spray bottle was available, placing soiled wiping cloths could allow pathogens to grow on the wiping cloths which could contaminate food contact surfaces (i.e. prep tables). Wiping cloths must be placed in a bucket of sanitizer solution.
      • 8.5 - Wiping cloths must be maintained and stored in a sanitary manner.
      • 8.7 - Equipment, utensils and food contact surfaces must be cleaned and sanitized in a manner that removes contamination.
