- 1) The counter ledge behind the 2 comp sink was severely water damaged and difficult to clean/maintain. Please repair/replace so surface is smooth, nonporous, and easily cleanable.2) The cabinet under the 2 comp sink was water damaged. Please assess for mould, address leaks, and repair/replace damaged materials.

- Bucket of quat sanitizer on the prep counter did not register a sanitizing residual. Automatic dispensing system was not dispensing any chemical (corrected). Ensure quats sanitizer measures 200 ppm. Use test strips to monitor concentration levels.
