    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • High Temperature dishwasher is available but was not operating at the time of the inspection. Staff monitor the manifold temperature gauge and record this temperature. Discussed obtaining a waterproof, maximum registering thermometer for measuring the rinse temperature.*** Please obtain a waterproof, maximum registering thermometer for measuring the rinse temperature and monitor and record this temperature on days of operation. ***
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The range hood ventilation system was unacceptable. The left side hood was not working and the right side hood recirculated back into the kitchen space.*** Please repair/replace the range hood ventilation system and ensure it is vented to the exterior so that excess heat, moisture, vapours, grease and odours are removed from the kitchen space. ***
