      • Probe thermometer on-site was not accurate. Obtain accurate probe thermometer.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • No sink and surface sanitizer testing strips were on-site. Obtain testing strips.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The exterior of the wall enclosing the kitchen has not been finished (is raw wood). Wall need to be made smooth, easily cleanable and impervious to moisture.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Need a food contact surface sanitizer and ensure you have the proper testing strips for it.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • No probe thermometer present and need to ensure all coolers have thermometers. Obtain probe thermometer and ensure all coolers have thermometers.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Not all handsinks were equipped with soap and paper towel in dispensers. Ensure each handsink is equipped with soap and paper towel in dispensers.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • There is some raw wood on wall in back dishpit area; remove or paint the wood so that it is smooth, easily cleanable and impervious to moisture.The door in the dishpit area by the freezer is wood; to be painted or otherwise made smooth, easily cleanable and impervious to moisture.Remove the wood under the legs of the oven.The exterior of the wall enclosing the kitchen has not been finished (is raw wood). Wall need to be made smooth, easily cleanable and impervious to moisture.

    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • There were some mouse droppings on the floor underneath the dishmachine and at back of one of the cabinets where there is a container of salt. Remove droppings and clean and sanitize this area. Move salt to pest-proof container.Chips in box in storage room are also to be put into pest-proof container or moved where mice can't access them.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The flooring in the walk-in-cooler is coming up and no longer easily cleanable. Replace flooring with a material that is smooth, easily cleanable and impervious to moisture.The flooring behind the bar has some cracks; please repair the cracks. There is a patch of wood floor in back storage area that need to be properly refinished so that it is smooth, easily cleanable and impervious to moisture.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • There is a portion of the white wooden shelf that is not painted; to be painted.The floor in the dishpit area is damaged/taped up. To be repaired or replaced and baseboard installed.Baseboard to also be installed in the walk-in-cooler is there is still a gap between the floor and wall when the flooring is re-done.There is carpet in the coffee area. Replace carpet with a material that is smooth, durable, easily cleanable and impervious to moisture.

      • There were some mouse droppings in the glasswasher cabinet where the chemicals are stored and the floor underneath the dishmachine. Remove droppings and clean and sanitize this area.

      • The flooring in the walk-in-cooler is coming up and no longer easily cleanable.
