      • Sliding door cooler temp approx 8 degrees C at time of inspection, 4 degrees C or less must be maintained at all times. Immediate adjustment required.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Main kitchen dishwasher thermometers are non-functional, operators unable to determine if operational temperatures are being maintained within required ranges. Immediate repair required. Manual "wash, rinse, sanitize" dishwashing operation to be utilized until such time as repair can be conducted.

      • Dishwasher appears to be functioning incorrectly (running longer than normal), unsure if reaching final sanitizing rinse cycle, with inadequate temperature readings. Repair required. Visiting catering/food prep groups advised to use manual "wash. rinse, sanitize" method of dishwashing (manual sinks) until such time as dishwasher restored to functional condition.
