    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Quats solution measured close to 0 ppm from the wall-mounted liquid proportioner and from solutions prepared in buckets.Sanitizer was tested multiple times, a new bottle was installed and the concentration still measured close to 0 ppm.Operator purchased non-scented bleach during the inspection. PHIs provided education on measuring and creating a solution that measured at least 100 ppm (50 mL bleach and 10 L water). Please use bleach/water solution for food contact surfaces instead of Quats from wall-mounted dispenser until the unit can dispense 200 - 400 ppm of quats sanitizer.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Utensils were being washed with a residential mechanical dishwasher in the Memory Care Unit. Please ensure to use only a commercial dishwasher that can reach 71C at dish-level to ensure proper cleaning and sanitizing of utensils. Alternatively, revert to using proper manual dishwashing procedures, which would involve washing, adequately rinsing and soaking in sanitizer for at least 2 minutes.
