The storage racks above the dishwashing area had been cleaned. The staff reported that they will clean the racks used to store the clean dishes and utensils as well.

- Oct 31: Temperature of a preparation cooler is recorded 7°C. The internal temperature of the food items was 4°C-5°C. The staff were preparing a large order at the time of inspection and cooler doors were continuously being opened. Operator was advised to ensure that the cooler is at or below 4°C. The Operator was advised not store high risk products in the cooler if the cooler does not reach required temperatures.

The internal temperature of the stored food items measured between 6°C and 7°C.At the time of inspection, the operator promptly transferred the food items to the stand cooler to ensure proper temperature control.

Operator is further advised not to store high risk food in this cooler until it is repaired.
