OBSERVED MISSING BASEBOARD TILES IN THE PREP AREA, ESPECIALLY IN THE CORNERS. MUST REPLACE MISSING BASEBOARD TILES.

MANAGEMENT INSTRUCTED THAT SHELLFISH TAGS MUST BE KEPT WITH THE PRODUCT UNTIL SOLD, THEN KEPT FOR AN ADDITIONAL 90 DAYS AFTER. MANAGEMENT DISCARDED 7# OF MUSSELS WORTH $20.       • The area outside of the establishment used for the storage of garbage shall be clean at all times and shall not constitute a nuisance. OBSERVED THE GROUND AROUND THE GARBAGE AND GREASE DUMPSTERS WITH A BUILDUP OF GREASE, FOOD LITTER AND GARBAGE. THE GARBAGE CAN WAS ALSO OVERFLOWING WITH WASTE AND GARBAGE. MANAGEMENT HAD THE GARBAGE REMOVED INTO THE OTHER GARBAGE CANS. MANAGEMENT INSTRUCTED TO MAINTAIN THE AREA CLEAN AT ALL TIMES. SERIOUS VIOLATION 7-38-020.

      • All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. MUST PROVIDE A THERMOMETER INSIDE OF THE SUSHI COOLER.
