- 1) There were no drain plugs available for the dishwashing sinks. Drain plugs are needed to complete manual dishwashing and sanitizing.2) There was no sanitizer available for dishwashing. -obtain sanitizer to be used for manual dishwashing; ensure you have corresponding test strips to measure the concentration of sanitizer.

- There was raw/unfinished wood in the kitchen.-ensure all surfaces are smooth, durable, non-absorbent and easily washable.-paint/seal the unfinished wood.
