- All cold food shall be stored at a temperature of 40F or less. OBSERVED COOKED AND RAW CHICKEN STORED ON THE PREP TABLE AT 50-64F. MANAGER STATED THAT THEY WERE DEFROSTING THE CHICKEN BEFORE COOKING IT FOR DINNER SERVICE. MANAGEMENT VOLUNTARILY DISCARDED 65# OF FOOD. CRITICAL VIOLATION 7-38-005A.

- OBSERVED POTS AND PANS BEING WASHED AND RINSED AT THE 3 COMPARTMENT SINK WITHOUT BEING SANITIZED. I INSTRUCTED MANAGEMENT HOW TO SET UP THE 3 COMPARTMENT SINK TO WASH, RINSE AND SANITIZE DISHES AND UTENSILS. CRITICAL VIOLATION 7-38-030.

- All food should be properly protected from contamination during storage, preparation, display, service, and transportation. FOOD (ICE) NOT PROTECTED FROM CONTAMINATION DURING STORAGE INSIDE OF THE ICE MACHINE. OBSERVED MOLD GROWTH ON INTERIOR CONTACT SURFACES OF THE ICE MACHINE. UNIT TAGGED HELD FOR INSPECTION. MANAGEMENT INSTRUCTED TO TURN OFF THE MACHINE, REMOVE THE ICE AND HAVE THE INTERIOR SURFACES CLEANED AND SANITIZED. DO NOT USE THE ICE MACHINE UNTIL THE TAG HAS BEEN REMOVED FROM THE MACHINE. - All necessary control measures shall be used to effectively minimize or eliminate the presence of rodents, roaches, and other vermin and insects on the premises of all food establishments, in food-transporting vehicles, and in vending machines. OBSERVED LIVE FRUIT FLIES IN THE PREP AREA, EMPLOYEE RESTROOM AND MOP CLOSET. APPROXIMATELY 20 LIVE FRUIT FLIES WERE OBSERVED ON THE WALLS AND CEILING IN THE PREP AREA, EMPLOYEE RESTROOM AND MOP CLOSET. ADDITIONAL PEST CONTROL SERVICE IS NEEDED TO MINIMIZE OR ELIMINATE THE PEST ACTIVITY. SERIOUS VIOLATION 7-38-020.

- OBSERVED EMPLOYEE USING A TOWEL TO DRY DISHES AFTER THEY HAVE BEEN WASHED. MANAGEMENT INSTRUCTED TO ALLOW DISHES TO AIR DRY AFTER BEING WASHED.

- All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. MUST REPAINT THE SHELVES BELOW THE BEVERAGE SERVICE AREA. REMOVE CARDBOARD AND TOWELS FROM THE PREP TABLES. OBSERVED OPENINGS IN THE WINDOW SCREENS FOR THE KICTHEN WINDOWS. MUST RESCREEN ALL WINDOWS TO PREVENT ENTRY OF INSECTS.

- All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. DETAIL CLEAN AND DEFROST THE INTERIOR OF THE BREAD FREEZER.

- The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. DETAIL CLEAN THE FLOOR BELOW THE COOKING EQUIPMENT.

- The walls and ceilings shall be in good repair and easily cleaned. REPAINT THE CEILING WITH CHIPPED PAINT IN THE EMPLOYEE WASHROOM.

- REPAIR THE SINK STOPPER LEVERS AT THE 3 COMPARTMENT SINK SO THAT THE SINKS CAN HOLD WATER IN THE BASINS.

- All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. MUST PROVIDE A THERMOMETER IN THE REFRIGERATOR BEHIND THE BEVERAGE SERVICE COUNTER.

- Between uses and during storage ice dispensing utensils and ice receptacles shall be stored in a way that protects them from contamination. OBSERVED THE ICE SCOOP STORED IN THE COOLER ALONG WITH CONSUMABLE ICE. MANAGEMENT INSTRUCTED TO KEEP THE ICE SCOOP IN A CONTAINER OUTSIDE OF THE COOLER.
