    • 9. WATER SOURCE: SAFE, HOT & COLD UNDER CITY PRESSURE
      • The hot water supply is heated by a coil of engine coolant running thru the potable hot water tank. Water system not approved at this time for retail food sales. Submit all plans and documents on the water heating system to the Chicago Department of Public Health for review.
    • 10. SEWAGE AND WASTE WATER DISPOSAL, NO BACK SIPHONAGE, CROSS CONNECTION AND/OR BACK FLOW
      • The waste water retention tank needs to be separated from the food preparation compartment, install a tight fitting panel or door over the cabinet. The waste water tank is emptied from the bottom of the truck.
    • 35. WALLS, CEILINGS, ATTACHED EQUIPMENT CONSTRUCTED PER CODE: GOOD REPAIR, SURFACES CLEAN AND DUST-LESS CLEANING METHODS
      • The walls and ceilings shall be in good repair and easily cleaned. The walls and ceilings have raw wood and the fiberglass ceiling is rough and unsanitary, repair the surfaces so they are smooth, sanitary and easy to wash, rinse and sanitize.
