- Observation (CORRECTED DURING INSPECTION): Sauce cooler at internal temperature of 11.5C to 12.5C when food was probed.
- Corrective Action(s): Food including chicken, sauces and cream were discarded at the time of inspection. 1 container of chicken and a freshly made sauce that probed below 4C were kept and moved to another cooler.

- Observed inserts double stacked onto food surface without a barrier inbetween
- Corrective Action(s): 1. Ensure only a scoop with a handle, handle pointed up in dry bins. Otherwise, remove from bin after each use.
- 2. Inserts are not to be double stacked at the top of the prep cooler. In other coolers - ensure there is a lid/barrier inbetween containers of food.
