- Garbage bags used to wrap the pig spit. Please use a food grade food wrap or packaging as garbage bags could contaminate the food products.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Pig on the spit had an external and internal temperature of 25C. Food handlers reported that they took the pig out of the cooler the night before to allow the pig to dry. THE PIG CANNOT BE USED FOR PUBLIC CONSUMPTION DUE TO EXTENSIVE TEMPERATURE ABUSE.
