      • Observation (CORRECTED DURING INSPECTION): Potato wedges in steam table measured at internal temp. of 50C. Temperature logs indicated temperature reached 74C at time of cooking 30 min prior.
      • Corrective Action(s): *Corrective action: Cover wedges with lid to maintain temp. Ambient air temp measured at 67C.

      • Observation: Walk-in cooler/freezer (hot food side) floor have some grime build up. Other areas of the deli as well needs cleaning - i.e. cabinet shelving units, corners, underneath triple sink and some part of equipment (doors, inside, etc.). Fume hood has grease build up and sticker was not up to date.
      • Corrective Action(s): Flooring in the above-mentioned areas requires thoroughly cleaning to remove grime as well as other areas that are mentioned.
      • Ensure that fume hood is up to date on service date.

      • Observation: Triple ware washing sink (hot food side) had water pooling underneath. It may be due to leaking pipe (crack, etc.).
