    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1) No thermometers were available in coolers and freezer units. Ensure that thermometers are present in cooler and freezer units to verify the temperature.
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • 1) As this inspection was a demand inspection completed in an attempted approval, the permit is not available at the time of the inspection. When the facility has been approved, pay the invoice, print out the food handling permit and display the permit in a conspicuous place.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1) The front counter was in the process of being assembled during the inspection. Ensure that construction for the facility is completed such that the surface is smooth, easy to clean and impervious to moisture. Complete the counter top.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • 1) Pieces of equipment including the slush machine were still covered with plastic packaging. Ensure that all equipment is ready to use, cleaned and sanitized. Remove the packaging and prepare the unit for use including washing and sanitizing the unit.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • 1) A number of pieces of equipment and the front area where the counter was being constructed required cleaning. Ensure all equipment is removed from packaging, cleaned and sanitized before use. Clean up the areas where construction was being completed.
