      • Observation (CORRECTED DURING INSPECTION): 1) No sanitizer/bleach solution made up, staff unaware this is a requirement or how to make it.
      • 2) Dishware not being properly washed, rinsed and sanitized in 3 compartment sink as staff unaware of santize step
      • Corrective Action(s): Educated staff on the importance of sanitizer and how to make up a 100ppm bleach solution. Ensure all warewashing is being done correctly according to sign above the sink. Staff must have bleach solution available for surface disinfection throughout the day.

      • Observation: Boxes of food, ingredients and take out containers on the floor in the back.
      • Corrective Action(s): All food and take out containers must be stored up off the floor to prevent contamination. Clean and organize the back of the facilty by Wed March 18/26

      • Observation: Lots of spilled tea and ingredients in the front of the facility as well as boxes and debris on the floor in the back.
      • Corrective Action(s): Thoroughly clean the faciliy, including floors,shelves and counters. This is an ongoing issue, next time enforcement action will take place.

      • -the perimeter of the back storage area including under storage shelves, between equippment, under the 3 compartment sink
      • -the perimeter of the front kitchen area, including betweeen the prep cooler and the wall, cup sealer and the cabinet, prep cooler and other cabinet (lots of spilled food)
      • -walls around 3 compartment sink, cup sealer
      • -under table that has burners on it

Concentration of sink at 100ppm and spray bottle at 100ppm chlorine by the end of the inspection.

      • Corrective Action(s): 1) Once can is open, it must be placed in a food grade container and not left in the can as the can starts to corrode when exposed to air. Product discarded

      • Observation (CORRECTED DURING INSPECTION): Measures, cups and containers are washed but not sanitized. Operator filled up the sink with Bleach solution 50-100 ppm. Dishware are to be sanitized after use. Three-compartment dish washing poster is posted on the wall.
      • Corrective Action(s): Ensure to follow three compartment sink dish washing process according to Fraser Health manual dish washing sign. Properly fill up sanitizer ( Bleach solution 50-100 ppm) in the sink and sanitize dishware after rinse.

      • Observation (CORRECTED DURING INSPECTION): Dishes are being washed but not sanitized by staff.
      • Corrective Action(s): Ensure that dishes are being washed and sanitized as per the sign posted. Staff were instructed on how to fill third sink with bleach water. Sink was filled and found to have a 100 PPm chlorine residual. Rewash dishware and utensils. Acquire test strips to confirm a 100 PPM chlorine residual is made in this sink. To be corrected immediately.

      • Observation (CORRECTED DURING INSPECTION): Food equipment not being sanitized after washing. Staff unable to located test strips. Bottles of sanitizer were empty.
      • Corrective Action(s): Dishes are to be washed and sanitized using the three compartment sink method. Staff were instructed on how to wash and sanitize food equipment using the three compartment sink technique. Signage also posted for staff reference. Dishes were sanitized at time of inspection. Locate and use test strips to verify the concentration of sanitizer. To be corrected immediately.

      • Observation: Staff belongings are being stored on top of the chest freezer. Boxes of food and items being stored directly on the floor.

Provide racking or reorganzie so that all items are stored at least 6 inches off the ground to protect from contamination and for ease of cleaning. To be corrected within one week.
