- Observed two pots of hamburger soup on the stove. Temperatures of the soups measured at 59.8°C and 68.3°C respectively using probe thermometer.
- Operator mentioned that the soup was cooked approximately 1.5 hours before temperature was measured.
- Operator unaware about cooling procedures.
- Corrective Action(s): Esnure soup is cooled from 60°C to 20°C within2 hours and 20°C - 4°C within 4 hours. Ice water bath used to cool down the soup as per the requirement.
