      • Water is pooling on the floor under the dishwash sink. The plumbing below the 3 compartment dishwash sinks is leaking. - Requires repair.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Do not place the tongs (utensils) on a reusable cloth towel.- Remove the cloth and use single use paper towel if needed.

      • Tongs and wiping cloths were stored in the same sanitizer solution.- Store wiping cloths and utensils in separate sanitizer solutions.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Tongs used for dispensing foods were stored in a sanitizer solution along with wiping cloths. Observed staff remove and rinse the tongs under water and then place into clean storage.- All dishwashing is to occur at the 3 compartment wash sink. Operator to review proper manual washing procedures with all staff.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Upon arrival the handwash sink was filled with dishware.- Designated handwash sinks are to be kept empty at all times and used for handwashing purposes only.
