      • The island drawer by the power pillar has food debris present on the interior drawer bottom. Additionally, the hand mixer and electronic knife handle in the drawer has old food debris present on the body of the apparatus. Action shall be taken to clean the drawer, and the equipment inside.

      • The grey Kitchen Aid mixer has food debris on under the mixing head and front of the equipment. More indepth cleaning and sanitizing is required. The mixer shall be cleaned and sanitized. Dirty equipment can be a vector for cross contamination leading to foodborne illness.

      • The white Tupperware storage containers in the dry storage area has a built up of dust/debris. More routine cleaning of these items are required, as they are a common touch object, that can lead to cross contamination.

      • Gravy (from powder) is noted at 55C in the steam table. The gravy was heated on the stove top and placed in the steam table which was not yet hot. This cooled the gravy under the required 60C holding temperature. Ensure the steam table is hot before placing food in the steam table.

      • The metal fridge in the side room has its rubber gasket partially off the door. Action shall be taken to attach the loose gasket to ensure outside air is not entering the fridge, which can create moisture issues.

      • A thermometer is not available to verify the dishwasher is reaching 72C at the dish level. The staff is recording the temperature at the manifold. A thermometer with a min/max function (dishwasher safe) is required to ensure the dishwasher is operating satisfactory.Nov 14 update - Kitchen staff is unaware of thermometer for the dishwasher.

      • During the kitchen renovations, the temporary food production/sanitization plans were not shared with the local inspector. Deviations to approved food production shall be approved by the local Public Health Inspector

      • The sanitizing in the sanitizer pail was too week (50ppm). Please follow the manufactueres concentration requirements of 200ppm, or change the solution more often to ensure sanitizer strength is maintained.

Action shall be taken to clean the area, and increase the frequency of future cleaning.2) The window area by the sink has a build up of debris. ction shall be taken to clean the area, and increase the frequency of future cleaning.

      • Kitchen may go through a renovation. If the kitchen goes through a renovation, plans shall be forwarded to this office and counltation is required for intermediate plans for food preparation/storage for the residents.
