Inspectors check that cold food stays cold, hot food stays hot, cooked food is cooled quickly, and that staff have accurate thermometers. Temperature problems are one of the most common causes of food poisoning, so these are treated as critical findings.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • At time of inspection:1. Most hot-holding units were not up to correct temperature of 60c/140F. There appeared to be only one (1) candle underneath most hot-holding chaffing dishes. The operator placed a second candle under each of the four hot-holding units. Upon re-inspection, all hot-holding units appeared to be at or above 60c/140F or greater. In future, (and if you wish to use candle-style hot-holding units), ensure there is a minimum of two (2) candles underneath all chaffing dishes to ensure this temperature is achieved and maintained.
