    • F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
      • Observation(s): Observation: Glass dishwasher is not in operation. Only single service glassware is provided to patrons. Food contact surfaces are minimal (e.g. ice scoops, bowls to hold lime slices) and are washed in a compartment sink. Operator was asked to add a sanitization step for these items (e.g. after wash and rinse step, soak dishware in a 100-200 ppm bleach solution and then air dry). Corrective Action: Ensure food contact surfaces receive a wash, rinse, and sanitize step.
