    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • - Butcherblock counter requires refinishing - deep grooves with visible dirt inside.- Prep counter next to bakery sink should be connected to the wall like the surrounding counters. - April 10, 2025 - butcherblock countertop had been removed and the remaining stainless steel prep counter was caulked to the wall and sink next to it.-HVAC system blowing directly into the back prep stations and must be adjusted.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • The following items/areas were visibly dirty and require cleaning:- freezer #2 floor - ice build-up- under hand sinks and caulking behind- dish area lower walls- large mixer and area around - find a better sized garbage container for the bakery area- bakery prep wall- walk-in cooler 1 floor under shelving - edges along the baseboard

    • 06. Are appropriate food handling practices and plans in place to ensure that food is handled in a manner that makes it safe to eat?
      • Multiple temperature and sanitation logs were not up to date. Discussed issue with the camp manager and chef.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • The dining room vegetables tongs storage requires new planning to prevent the utensils from being submerged in the product containers. Discussed the issue with the camp manager.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Gap to outside noted at the back kitchen door. All exterior doors must be completely sealed to the outside to prevent the entry of pests and/or vermin.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Shelving in walk-in cooler #1 at the front of the kitchen was rusting. Refinish shelving to be free of rust, smooth, non-porous, and easily cleanable.Baseboards below sinks in the dishwashing area were detaching from the walls. Repair the baseboards/walls in this area.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Dining room milk display cooler measured greater than 4C. All perishable products were transferred to a different cooler during the inspection. Do not use this unit for perishable product storage until it can maintain product at or below 4C at all times.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Shelving in walk-in cooler #1 at the front of the kitchen was rusting. Refinish shelving to be free of rust, smooth, non-porous, and easily cleanable.Baseboards below sinks in the dishwashing area were detaching from the walls. Repair the baseboards/walls in this area.
