    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Food prep equipment and utensils were not sanitized in the 2 comp sink. Please ensure manual wash procedure includes: wash with detergent and rinse with clean water in the 1st compartment, then sanitize by complete immersion in an approved sanitizer in the 2nd compartment. Conduct air drying in a sanitary manner.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Sanitizer test strips for quats were not provided. Please obtain.
