- Observation: Some mouse activity noted. Sticky traps on counter and shelves at vacuum packaging station and small volume of droppings noted in low traffic areas. New pest control contract in place. Operator working with technician to seal access points with metal flashing and chicken wire.
- *No obvious food accumulations noted. Most areas of kitchen are substantially clean and organized.
- Some fruit fly activity noted in dishpit. Fruit flies dotting ceiling tile in area.
- *No obvious accumulations of stagnant or nutrient enriched water ponding anywhere in dishpit. Substantially dry. It is possible that the large prep sinks, especially where the grate top is placed may get overlooked at end-of-day cleaning, but minimal signs of this observed.

- Observation: Mouse access control in the dry food storage room has been compromised. Expandable foam eaten away at piping conduit noted. Droppings observed at moderate level on floor and on a selection of containers. Can smell rodent activity in this room, possibly due to mouse activity in trap. Noted significant mouse droppings, some insulation-like chewed material, and a dead mouse in trap, all centered around vacuum packing station outside of dry food storage room. Smells evident in cookline area. Further observations noted several sticky traps throughout kitchen with dead mice.
- Corrective Action(s): Make sure pest control is actively reviewing all traps in premises and regularly changing traps when necessary.
- Staff must take apart, investigate and clean the following spaces to perform mouse control activities:
- - Vacuum packing station, floor counter and shelves;
- - dry food storag;
- - Cookline area.
- ** re-evaluate all blocked off points of entry and resecure to prevent access - less spray foam and more steel wool.
- Regular observation and removal of used traps needed throughout kitchen as discussed with manager.

- Observation: Fly sticky traps in multiple areas of premises. Placed around and above food prep or storage areas may lead to contamination from the trapped dying flies pooping onto the food.

Droppings visible on floor in hard to reach areas of dry food storage, on floor around dishpit, electrical room and entrance area, in some of the cupboards in the servery area, and especially around the primary cookline and deep fryers. Some secondary shelves also subject to activity.
- Most areas of the premises very well cleaned and organized. Most food in storage areas protected in containers with lids.
- Operator stated Pest Control in Weekly and is the same company as the building/property. Extensive trapping in place. Extensive blocking of access by use of steel wool in place.
- Corrective Action(s): Continue to use steel wool or copper wool, with expandable foam to anchor the wool, at key access points as discussed. Clean up droppings on secondary shelves, floors in hard to reach areas, and in cupboards to track activity.

- Observation (CORRECTED DURING INSPECTION): A densely packaed container of cooked marinated beef covered with a lid was stored in the kimchi cooler. Internal temperature of the meat was 40.6C. According to staff, the meat was in the process of cooling. The container had a large volume of cooked beef which can be difficult to cool down quickly, especially with covering
- Corrective Action(s): Divide the beef into smaller portions to allow faster cooling. Ensure potentially hazardous foods such as meat is cooler from 60C to 20C within 2hrs and from 20C to 4C or less within 4 hrs to minimize growth of bacteria.
