- 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
- Reinspection was conducted on May 1st, 2026. Owner stated that a technician was on site on Monday, April 27th, 2026. Technician stated that there was nothing mechanically wrong with the walk-in cooler's cooling system, but that it needed to be cleaned, which was completed. Owner stated that walk-in cooler was measuring approximately 0-2°C upon opening, however the walk-in cooler measured 8-9°C during the time of inspection. The three black "service doors" to the walk-in cooler all have damaged seals and the main door's closing mechanism is in disrepair and needs to be manually engaged every time the door is shut which could be contributing to the unit's inability to hold adequate temperatures. Please ensure that the indicated areas are replaced/repaired.The owner indicated that the cause has been identified - the exhaust fan for the commercial ventilation hood at the grill had not been turned on while the stove and grill were in use until recently. As a result, vapors and excess heat from cooking were not being removed from the premises and instead moved into the ceiling, which is where the A/C controller for the walk-in cooler is situated. The owner advised that once the exhaust fan was turned back on, the temperature setting on the unit feel to 2C when measured most recently with his own infrared thermometer.------The owner was advised to and agreed to contact a handyman to obtain an assessment for the repair of the seals on the service doors and the locking mechanism for the main door. A follow-up inspection will be conducted in the next several days to verify that the interior temperature of the walk-in cooler has indeed fallen to sub 4C levels. A repair by date for the seals and locking mechanism of the walk-in cooler will be determined once the assessment has been completed.

- 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
- The temperature readings measured using the data logger in the walk-in cooler revealed elevated readings in excess of reasonable deviations above 4C after closing/overnight on April 19th and April 20th, where temperatures should have fallen below 4C similar to those readings taken on April 17th and 18th. The owner noted that the kitchen was busy over the weekend but that there was not excessive preparation of hot foods that were later cooled in the cooler which would have potentially explained the elevated temperature readings that were measured. The owner has been advised to have the walk-in cooler assessed by a qualified technician by the end of the day on Wednesday April 29th to determine if adjustments or repairs are necessary with a follow-up visit by an inspector to confirm. The owner will be cleaning the compressor and other components in the meantime.Reinspection was conducted on May 1st, 2026. Owner stated that a technician was on site on Monday, April 27th, 2026.
