- The chlorine/bleach concentration measured in the dishwasher in the bakery is inconsistent. The concentration of chlorine/bleach is measured at 0 ppm on several dishes in the dishwasher post-cycle. Ensure that the dishwasher is serviced to be capable of consistently sanitizing all dishes at 100 ppm chlorine/bleach, or to reach a minimum temperature of 71 degrees Celsius at the dish level.
