    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Bakery:The mechanical dishwasher at the bakery department measured between 58.2°C to 63°C after running a dishwasher cycle for three times. Ecolab advised them to use the washer and sanitizer the equipment in sanitizer solution. The health inspector advised not to use the dishwasher.In the meantime, manual dishwashing method using the 3-compartment sink and the dishwasher in the Deli department will be used.Fix the dishwasher to maintain 71°C at the minimum at the plate level.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Bakery:The handwashing sink at the bakery department was obstructed with a cart.The cart was promptly stored in a separate location.Ensure handwashing sinks are accessible at all times to allow for convenient access for food handlers to wash their hands.

      • Bakery;Proofer handle was cracked along the left side door. The management indicated to replace the proofer.

      • Meat department:Debris was noted underneath the display cooler adjacent the Deli used to hold the chicken.Bakery:Dust buildup was noted on the ceiling and air vents.Deep clean the indicated areas.
