- F2.1 Does the facility have proper monitoring supplies?
- Observation(s): Chlorine/bleach test strips have expired. expired test strips can give false test results. • Obtain new test strips to ensure chlorine sanitizer concentrations are adequate for effective sanitization of food contact surfaces.
- F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
- Observation(s): Grate covering the fans on the condenser unit in the walk-in cooler observed to have accumulated dust and dirt. This can lead to contamination. • Remove the blue plastic grate from the condenser unit, clean and sanitize the grate before replacing it on the condenser.
- F2.7 Are there handwashing stations available and properly supplied?
- Observation(s): A Handwashing station must be located in the kitchen area, unobstructed by doors so that food handlers don't need to touch any door handles. Food handlers must be able to wash their hands after leaving the washroom, before commencing food handling. • Ensure single use paper towel is available in the adjoining (PSG) room, which is already equipped with a sink and liquid soap. A wall-mounted paper towel dispenser would be the best long-term solution. • Educate all kitchen users with signage indicating the new location of the handwashing station.
