    • 304 - Premises not free of pests [s. 26(a)]
      • Observation:
      • Mice droppings found on trollies, counter tops, floors along the base of walls, and on shelves in the premises. Holes in walls found.
      • Corrective Action(s):
      • 1) Clean up the droppings. Wash and sanitize all surfaces that came into contact with the droppings. Wash with hot soapy water, then sanitize with a bleach and water solution.
      • 2) Call a professional company to eliminate the mice problem and to block all holes or openings in walls and/or around pipes. A contract to eliminate and monitor for pests shall be put into place.
      • 3) Follow all recommendations made by the professional pest technician.
      • 4) A detailed cleaning of the whole premises shall be done to remove all food debris on walls, floors, surfaces and equipment.
      • 5) Throw away all unused/broken equipment to eliminate places for mice to hide and live.

      • Observation:
      • There is food debris and grease found on walls; counter top; floors under prep tables, equipment, shelving racks, & sink; and on equipment.
      • Corrective Action(s):
      • A deep cleaning, from top to bottom, of the whole premises requires to be completed. All items must be remove from the floor, shelves and cupboards so all surfaces are scrubbed clean with hot soapy water, degreaser and a brush.

      • Observation:
      • 1) The 2-comp sink in the back kitchen is still leaking. There is a large bus bin collecting the water. The collected water is supplying rodents with a water source.
      • 2) The main sandwich assembly cooler was 17C. No food was being stored in the cooler at time of the inspection, and a service company was coming to fix it.
      • Corrective Action(s):
      • 1) Repair the 2-comp sink so it no longer leaks.

      • 2) Do not use the sandwich assembly cooler to store perishable foods in, until it is repaired. Repair the sandwich assembly cooler so it can maintain food at 4C of colder at all times.

      • Observation: There are some holes in walls that could allow the entry of pests. Observed old mice droppings around the hole.
      • Corrective Action(s): Repair or block all holes in walls and any openings around electrical outlets and around pipes. Clean up the droppings and sanitize all surfaces that have been in contact with the droppings.

      • Observation: Accumulation of food debris under equipment, sink, shelving racks. Built up food debris in the 2-comp dishwashing sink. This will attract pests.
      • Corrective Action(s): A thorough, deep cleaning of the premises from top to bottom is needed. Use hot water, soap/degreaser to remove food debris. Then spray with a sanitizer solution of bleach and hot water to kill germs.
      • 1) Clean walls and floors behind and under equipment, sinks and shelving racks.
      • 2) Move items away from walls so the walls & floors under and beneath can be cleaned.
      • 3) Take all items off the floor and clean the floor and the floor along the base of walls.
      • 4) Take all items off shelving racks and in cupboard so the shelves can be washed.
      • It is highly suggested a cleaning company is hired to complete the thorough cleaning.

      • Observation: The front hand washing sink and the 2-comp dishwashing sink has a leaking waste pipe. Dirty water is being caught in buckets. The pooling water will attract pests (flies and rodents).
      • Corrective Action(s): Repair or replace the waste pipe so it no longer leaks. Wash the waste pipes under the sink to remove the accumulated food and grease debris.
