      • A few garbage bins were placed on top of the food prepping surfaces at the produce prep area. The operator removed the bins and sanitized the surfaces promptly.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The butter chicken was measured at 58 °C. The operator took the butter chicken back to the oven for reheating and turned up the temperature setting of the hot holding unit. The operator was told to closely monitor the temperature and ensure the temperature is above 60 °C for all hot holding units.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • The high temperature dish washer at the deli department did not reached 71 °C at dish level. it was run 4 times and was measured at 68 °C.The operator was told to use the 3 compartment sink for doing the dishes manually until a technician comes and fixes the dishwasher.

      • 1. Egg crates and boxes were stored on the floor in the cooler and freezer respectively. Staff stored food off the floor.2. Chicken stored in the walk-in cooler was not properly covered. The operator immediately covered the chicken.

      • Personal items (jackets) were stored on the utensils storage rack.
