     • Observation: Hi temp dishwasher is not consistently injecting soap into the dishwasher and rinse aid is injecting into dishwasher after cycle complete.
     • Corrective Action(s): Operator to handwash all dishware and then run through dishwasher to sanitize until repairman has serviced machine. Dishwasher final rinse reached 73 degrees C. at the plate surface.

     • Observation (CORRECTED DURING INSPECTION): Quat dispenser is dispensing at less than 200 PPM residual.
     • Corrective Action(s): Operator to manually mix until it can be addressed. At time of inspection, operator manually mixed and tested with test strips to verify a 200 PPM residual.

     • Observation (CORRECTED DURING INSPECTION): Quat sanitizer is measuring 1000 PPM residual in the spray bottles. Some of the bottles were not labelled.
     • Corrective Action(s): Ensure that the sanitizer is dispensed at 200 PPM residual. Operator to have chemical company come in and adjust it. In meantime, concentration was reduced manually. Bottles are now labelled.
