- Observation (CORRECTED DURING INSPECTION): Bleach surface sanitizer solution was not prepared at start of inspection.
- Corrective Action(s): Staff prepared a 200ppm solution. There must be a sanitizer solution prepared and ready to use at all times.

- Observation (CORRECTED DURING INSPECTION): 1) Several observations of uncovered containers of food stored in coolers throughout the kitchen - prep coolers, standup coolers and walk-in cooler.
- 2) One box of rice in dry storage room was uncovered - found a spider on top of the rice.
- 3) Boxes of canned items stored by the back exit found to have rodent droppings and chewed paper inside the boxes. Staff claim it arrived at the facility this way. Did not observe any other signs of rodent activity elsewhere.
- Corrective Action(s): All stored food products must be covered and protected for contamination - unless they are for immediate use.
- All products received at the facility must be inspected for quality and safety. Damaged products should be rejected and returned to the supplier.

- Observation: Low temperature dishwasher still not able to dispense chlorine for sanitizing. Verified again using test strips - EHO test strips did not change colour but operator test strips did. Verified the accuracy of test strips by running under cold water - again, EHO test strips did not change colour but operators test strips did.
- Corrective Action(s): Service the dishwasher immediately so that it can dispense sanitizer. Discussed manual sanitizing with staff - prepare a 100ppm bleach solution in 1 compartment of the sink and submerge items for at least 2 minutes before air drying.
- Note: this is a TEMPORARY solution only. Operator to contact service company today to set up an appointment. Keep EHO updated with timeline for repair.

- Observation (CORRECTED DURING INSPECTION): 1) Low temperature dishwasher was not dispensing any chlorine residual for sanitizing at the start of the inspection.
- 2) No food contact surface sanitizer solution was prepared.
- Corrective Action(s): Operator changed to a new vat of sanitizer. Dishwasher then able to dispense 50ppm chlorine residual.
- Bucket with sanitizer solution was prepared for the kitchen at time of inspection. There should be a surface sanitizer for the back of the house (kitchen) and front of the house (bar and dining room) prepared and available at all times.

- 3) Noted one opened bag of rice in dry storage room.
- Corrective Action(s): All stored food items that are not for immediate use must be covered to protect from contamination.
