    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Dishwasher was on but a cycle could not be run.-Ensure dishwasher is able to clean and sanitize dishes-Temporary measure: operator will use 3-compartment sink for dishwashing. Left sink soap, middle sink rinse, right sink sanitize. Right sink was filled with ~50L water and operator added about 90mL bleach for 100 ppm chlorine (test strips available)
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • A few mouse droppings were observed in the back hallway and storage room. Could not determine if they were new or old.-Carefully clean mouse droppings and monitor for further pest activity
    • 23. Is the facility maintained in a clean and sanitary condition?
      • The gap beside the fryer and wall has an accumulation of grease.-Clean
