- The quat sanitizer solution measured 0ppm at the time of inspection. - A 200ppm quat solution was prepared during the inspection.

- The refrigeration unit in the south tasting room that can be used to store charcuterie was not equipped with a thermometer. - Ensure any refrigeration unit used to store perishable food items is equipped with a functional thermometer.

- The mechanical dishwasher was not connected to detergent. Dishes are not being washed prior to being sanitized.- Dishwasher to be connected to detergent to ensure dishes are washed, rinsed, and sanitized.
