- 1. No surface sanitizer was being used. There is a concern about the use of chlorine bleach and young children. Quat sanitizers are not dangerous or toxic in normal use conditions. Purchase a quat sanitizer and test strips for use as a surface sanitizer.

- 1. multiple two-compartment sinks were available. There was no sanitizer step used in dish washing. Purchase a quat dish sanitizer solution and ensure proper 3-step dish washing and sanitizing is used for equipment involved in the production and sale of foods.
