      • A general cleaner was observed to be used for sanitizing surfaces. General cleaner is used for removing the dirt debris; however, a sanitizer is required to effectively remove bacteria. Ensure that a bleach solution at 100 ppm or an alternative approved sanitizer is used for food surfaces.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • No chlorine test strips were observed. Test strips are required to ensure adequate chemical concentration for effective sanitizing of surfaces. Ensure that chlorine test strips are available during re-inspection.
