- The available high temperature dishwasher was measured less than 71C at dish level and at 68C on the external guage. - 2 compartment sink is available at the dishwashing area. Ensure reusable utensils are washed, rinsed and then sanitized(by immersing in 100ppm of chlorine solution or 200ppm of quat solution for at least 2 minutes), until commercial dishwasher is maintained at a minimum temperature of 82C/180F on the guage.
