    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • No thermometer is present to measure cooler temperatures. A thermometer shall be obtained to ensure temperature are satisfactory.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • A cutting board was in poor condition, with deep scratches down past the cutting layer. The operator discarded the board during the inspection. Please ensure all food contact surfaces are in good condition to allow cleaning and sanitation.
