    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: No sanitizer on site to be used during any meals prepared at the church (Public Health Significance) Sanitizing solutions must be strong enough to destroy bacteria on surfaces to prevent the contamination of staff, clients or food on contact with the improperly cleaned surface.
      • Corrective Action: Operator to purchase bleach to be stored in the kitchen to be used to sanitize surfaces and while washing dishes. Ensure the correct concentration (200 ppm for surfaces and 100 ppm for dishwashing) is used. Use chlorine test strips to ensure the correct concentration of bleach is used.

    • 211 - Frozen potentially hazardous food stored/displayed above -18 °C. [s. 14(3)]
      • Observation: (CORRECTED DURING INSPECTION) Freezer measured at -5°C (23°F). The regulatory requirement for freeze temperature is -18°C (0°F). Storage at -18°C (0°F) will help ensure optimum food shelflife and quality.
      • Corrective Action: Operator reduced the temperature of the freezer to maxium coldness. Continue to routinely monitor and record the temperatures of both the fridge and freezer to ensure that they are working at the correct temperature.
