      • The mechanical dishwasher could not achieve the required final rinse temperature, which was measured at 52°C - plate level. The temperature gages displayed 126°F/52°C. ** Action required: Please ensure the dishwasher is achieving the required sanitizing temperature. ** In the meantime, sanitize all dishware manually. A quats sanitizer dispenser was readily available at the dishwashing station and signage was also available to guide staff in performing proper manual dishwashing.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Handwashing station near the mechanical dishwasher area was not equipped with paper towel. Once notified, the required supplies were provided. ** Please continue to monitor handwashing stations and ensure the necessary supplies are consistently available.
