- Observation (CORRECTED DURING INSPECTION): All small sanitizer buckets and two large red sanitizer buckets at the front of house tested to be 50ppm of QUATS. Some buckets look visibly soiled. Operator replaced all sanitizer buckets with new solution from the QUATS dispenser tested at 200-400ppm. Ensure to monitor all sanitizer solutions and replace when visibily soiled and every 2 hours.

- Observation (CORRECTED DURING INSPECTION): 1. Sanitizer bucket in main food prep area with cloths submerged was tested at 100ppm Quats.
- Did not observe cloths in sanitizer to be used during the length of the inspection.
- Bucket with sanitizer is left on floor to the side.
- 2. Countertops and underequipment - food debris and spillage of coffee, water and milk.
- 3. Inside cabinets - coffee stains from previous spills.
- 4. Cups and mugs inside cabinets had coffee stains.
- Corrective Action(s): 1. Immediately refill Quat sanitizer bucket to ensure it is 200ppm. Resubmerge the cloths to sanitize them.
- Use the cloths.
- 2. Wipe up all spillage and remove food debris. Clean and sanitize all surfaces.
- 3. Clean and sanitize inside all cabinets. Remove and discard inventory, such as single use containers and cups that have been stained.
- 4. Rewash cups and mugs pulled out during the inspection that appear to have stains.

- Observation: 1. Dirty coffee canister and syrup dispenser with syrup inside is being stored inside sanitizing sink.
- Strawberry piece inside drain of sanitizing sink.
- 2. Fabricated drain pipe is capturing drips from 2 backflow preventors in the wall that is leaking water and draining into the rinse sink.
- Corrective Action(s): 1. Remove, clean and sanitize dirty equipment.
- Clean the sanitizing sink and remove food debris.
- Ensure one way flow of dishes.
- Ensure all staff are aware and trained on 2-comp sink procedures.
- This was completed during the inspection, thank you.
- 2. Call a plumber and fix the backflow preventor that is leaking. Remove partial pipe. If backflow preventor leakage is excessive, Township and Building Inspector should be notified.

- Observation (CORRECTED DURING INSPECTION): Sanitizer for the 2 small buckets underneath the coffee stations at the front prep counters have about 0-100ppm Quat.
- Sanitizer dispensing into back sink is at 400ppm. Operator changed sanitizer buckets during the inspection.
- Please ensure they are changed more frequently to maintain adequate concentration for sanitizing food prep surfaces.

- Observation: Hand wash station at back storage (employee change area), before entry way of front prep area has a broken soap dispenser and no paper towels. Operator said soap dispenser has been ordered.
- Staff were reminded by supervising staff to wash hands before start of shift at the front end, thank you.
- Corrective Action(s): Please supply this hand sink with a temporary soap dispenser and refill paper towels in wall dispenser until replacement soap dispenser comes in. Please ensure employees maintain hand hygiene after changing into uniforms and coming in from the back entrance.
